I've decided that going gluten free is for the birds. Every time I eat a gluten free product like bread, cereal or pasta, I have terrible diarrhea for days. I know it's from the products because the only time it happens is after I eat a sandwich using gluten free bread, after I mix gluten free cereal with Chobani, or make a gluten free pasta dish. Any other meal, I'm fine. I don't know what is in these products (xantham gum perhaps?) that my body is rejecting, but I'm not eating them anymore. Yes, I could stick to the gluten free challenge and not eat bread, pasta, or cereal, but I know myself and a month without some sort of bread or pasta will only lead to a binge. I fear that even attempting to go on with the gluten free challenge would be very triggering for me. I don't want to ever start the cycle of binging and purging again nor do I want to restrict anything from diet.
I know a lot of people benefit from a gluten free diet and some people just happen to like rice noodles over regular noodles. I have a few unopened gluten free products that I'm giving away to MelissaNibbles readers. My loss is your gain! My first giveaway is for Notta Pasta.
Notta Pasta are gluten free, straight cut rice noodles. The winner of this giveaway will win a box of spaghetti and a box of linguini! To enter: Leave a comment below saying how you would prepare the noodles, link back to the giveaway on your blog, or tweet "I want to win Notta Pasta from @MelissaNibbles." That's three chances to win! You don't need to be a blogger to enter. I'll pick a winner at random on Thursday, March 25th at 8am.

I'd probably throw some laughing cow and broccoli on there. I seriously need to use up the laughing cow I got at Costco!
Hello, delurking. I have to say I think a lot of people "think" they are gluten intolerant, just another excuse to exclude food a lot of the time. It is almost trendy these days, yet notice other people, outside of the young girl/fitness/circle world don't give a hoot and manage just fine. Anyways, eat up and your right it is for the birds!
I just noticed you are in Boston, I am in Whitman, MA and go to grad school at Northeastern.
Good ole spaghetti baby!
linked back!
spaghetti baby!
I'd love to make some kind of thai dish with these noodles. Maybe pad thai? Oooh, the possibilities!! :)
Glad to hear about your good work news!
You know I would love those noodles :) Definitely thai food, for sure! I have yet to try making pad thai!
Sorry to hear that the GF thing didn't work out...I sometimes get upset stomachs from GF products too (like rice pasta that is trying to be like real pasta, but not rice noodles that are just rice noodles..you get the picture). Now that you mention it, I wonder if there is an ingredient that does that that makes it taste more gluten-y? I hope you find something else to help you!
I'm glad you're not sticking it out with the whole gluten-free thing where it's clearly causing issues for you. Hopefully something else helps! Happy Friday!
Sounds like ending the gluten free experiment may be a good decision.
Happy friday - and congrats on your news!
Congrats on good work new this week! I can't wait to hear the details!
I'm sorry you didn't get results from going gluten free. But then again, how lucky are you that gluten is something you can eat! I miss it so much! On to the next thing....I think finding relief from the fibromyagia is going to be a lot of trial and error.
Hey Melissa! Happy Friday! Congrats on the exciting work news! I'm pumped to hear about it.
Sorry that the gluten-free thing didn't do the trick. It was good to explore it though!
I would love to win those noodles! My best friend has celiac and I know how expensive gluten free products can get. I would love to give them to her. As a poor college student, I know she would greatly appreciate it!
congrats on the work news! sound verrrry exciting! im glad you realized tht this isnt for you and have stopped being gluten free, must be relieved to realize what was causing your stomach to be upset!
happy friday melissa!
hey girl! just found your blog. i'd eat that pasta with some red peppers, carrots, snow peas, and a peanut soy sauce with chicken! mmm
Hiii! I know this sounds obnoxious but I wish I had your problem with weight loss. I would LOVE to lose 6 lbs and it's sooo hard!!!!!! I wish it was hard for me to gain weight! I know a lot of people who wish they had your problem too. You seem to be gaining the weight back in a healthy way-- keep your head up and everything will fall into place, diet and work related. Tooth problems can be hard too! I hope you feel better and keep on blogging bc I LOVE reading it and I know you inspire so many people! xoxo
I would eat the pasta with chicken beacause I love pasta and chicken combination :)
Happy Friday girlie!!
I would use these to make peanut buttery noodles :) I'm confident you can meet your goals
Very cool. I would prepare these noodles with veggies and tomato sauce or maybe even in a cold thai peanut pasta salad.
Awesome giveaway! My son was recently diagnosed with gluten intolerance and our whole family is going gluten free. It's tough to find tasty, inexpensive gluten free items, so anything I can do and win is helpful :) I'm going to link to this on my blog as well!
